A rare Japanese heirloom from Nagaoka, Niigata Prefecture, the Nagaoka Kinchaku (also known as “purse eggplant”) is a culinary gem. Its name, “kinchaku,” refers to its charming purse-like shape. These glossy, nearly black fruits boast creamy-white, sweet, and non-bitter flesh—making them perfect for elegant dishes like steamed eggplant with ginger and soy.
